Ingredients:

  • 3 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 2 cup granulated sugar
  • 3 eggs
  • 1 cup peanut oil
  • 1 teaspoon vanilla extract
  • 2 cup squash
  • 1 cup chopped peanuts

Directions:

Mix all dry ingredients. Blend in eggs, oil, vanilla, and squash. Stir peanuts into batter. Divide mixture in half and spread in 2 well greased 8-1/2x4-1/2 inch loaf pans. Bake at 352 F. for 1 hour. Yields 2 loaves, 12 slices per loaf.
