Nutty Tomato Stack-ups
Ingredients:
- 1 (10 ounce) packages frozen chopped broccoli
- 1 cup shredded swiss cheese
- 2 tablespoon finely chopped onion
- 1/2 cup chopped roasted peanuts
- 4 large tomatoes
Directions:
Cook broccoli according to package directions; drain; add cheese, onion, peanuts, stirring well. Cut tomatoes in half. Place cut side up in baking dish. Spoon broccoli mixture on each tomato slice; broil 5 inches from heat 8 minutes or until cheese melts. Makes 8 servings.
