Southern Peanut Pie
Ingredients:
- 3 eggs
- 1/2 cup granulated sugar
- 1-1/2 cup dark corn syrup
- 1/4 cup butter, melted
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1-1/2 cup chopped roasted peanuts
- 9-inch unbaked deep dish pastry shell
Directions:
Beat eggs until foamy. Add sugar, syrup, butter, salt, and vanilla; continue to beat until thoroughly blended. *Stir in peanuts. Pour into unbaked pastry shell. Bake in a 375 degree F oven for 50 to 55 minutes. Serve warm or cold. May be garnished with whipped cream or ice cream. Makes 6 servings.
*Variation: SPICY PEANUT RAISIN PIE
Just before pouring the Southern Peanut Pie ingredients into the pastry shell, stir in:
1/2 cup raisins
1/8 teaspoon cloves
1 teaspoon white vinegar
Proceed with the baking according to directions.
